Blood Orange, Strawberry & Fennel Salad

Ingredients

2-1/2 cups, Lettuce/Spring Mix – Washed and Spun DryBlood Orange and Fennel

1 Blood Orange – peeled and sliced 3 times per inch

1/4 Cup Fennel Shavings – We shave what we need off the bulb as we go starting at the bottom.

4 Large Strawberries – Sliced thinly (and carefully!) from the bottom, but not all the way through the flower.

1/2 medium cucumber – sliced thinly

1/2 Avocado

 

Dressing

2 TBSP Orange Muscat Champagne Vinegar

1.5 TBSP EVOO

Pinch Kosher Salt

Dash Pepper

1 tsp Whole Grain Dijon Mustard

1 tsp Agave Nectar
